Omnivore - Paris 2018

This afternoon to Omnivore Paris 2018, a food exhibition showcasing modern cooking with a focus on young chefs. Among the highlights were demonstrations by Barr, Copenhagen (which has recently opened in the building formerly occupied by Noma and with the involvement of Rene Redzepi) who showcased herring with marmite (not the stuff you can buy in a jar but a complex concoction, rich in umami, that they cook up at the restaurant—“it’s a nightmare” said the chef “when you run out it takes two months to make another batch!”), waffles with sour cream and roe, and glazed cod for sharing; also three Michelin starred Sebastien Bras offering three ways to serve chicken with celeriac. Finally, the marvellous Anne Sophie Pic, who also picked up an award for creator of the year. Pic took over her family’s restaurant in 1997 with no formal training in cuisine, 10 years later she became only the fourth woman ever to be awarded three Michelin stars—what a legend.

We ate dinner at Les Pinces, a surf and turf restaurant in St Germain (with two sisters elsewhere in Paris). The food was reasonably good value, though the lobster roll was expensive (the same price as a whole lobster) and the crustaceans themselves not the finest that money could by (but at €25 no one complained). We greedily dismembered our respective lobsters and steaks, and talked food long into the night.
